Cheesy Goodness Baked Porkchops and Potatos


This dish is seriously amazing. Make a lot. Your family will trample you to get seconds and thirds. 

1. I took 4 potatos, washed, peeled and sliced em. 
2. I sprayed the bottom of a 9*13 baking dish and placed the sliced (uncooked) potatos on the bottom. Then I mixed them with salt, pepper and onion powder. 
3. Next I took 2 cans of cream of mushroom soup and blended them together with more salt pepper and onion. 
4. I took my pork chops and seasoned them with salt, pepper and onion and seared them in a pan first. I did not cook them to completion though, just merely browning them. and placed them on top of the potatoes, then poured the cream of mushroom soup over the top. I baked it in the oven for about half an hour. Then I took the dish out and sprinkled about 2 cups of cheddar cheese on the top. Then I baked it again about 20 more minutes or until the cheese was golden brown. 

*note, if I were to make this again, I would add one more can of cream of mushroom and maybe 1/2 cup of milk to make the liquid mixture go a little further over the potatoes. Still was delicious though!

Chicken Parm Casserole with Angel Hair Pasta


This is a really warm and filling meal to have on a chilly fall night!
1. I took about 10 chicken tenders (raw) and cut them into bite sized chunks. I sprinkled them with salt, pepper and garlic. 
2. I placed them into the bottom of an ungreased 9*13 baking pan. Then I covered them with marinara sauce from a jar. I did add a little extra salt pepper and garlic to give the marinara some added flare. 
3. I placed mozzerella cheese, about a cup and a half, on top of the marinara sauce. 
4. I added garlic parmesan crutons to the top and placed it into a pre-heated 400 degree oven for about an hour. 

*note, if I made this recipe again, I would probably sear the chicken on the stove for a few minutes just to give it some brown flavor. I would also cover it with aluminum foil next time for maybe the last 10 minutes so that the crutons dont burn. I didnt have any this time handy. 

For the pasta I just boiled some angel hair, and mixed the cooked noodles with butter, olive oil and Parmesan/salt/pepper to taste.

DIY Initial Autumn Wreath


This wreath was relatively inexpensive and easy to make. My friend came over and we had a craft day pow wow as we like to do for each themed holiday in a month. You can get the wreaths at any craft store and they are usually under 5 dollars. Also you can get the letters, leaves and accessories for the wreath at the same craft store. We used a glue gun to really make sure our leaves stayed inside the wreath. Add some accessories and paint/glue on your name initial. So cute!

Sugar Cookie Apple Cobbler


Yes, you read that right! This was so good I nearly got sick eating half the finished project in one sitting! :) 

1-I sliced up about 4 apples. 
2-I sprayed the bottom of a 9*13 baking dish
3-I placed the (uncooked) sliced apples in the bottom of the baking dish. 
4-I added 1/2 cup sugar and 1/2 cup brown sugar together with the apples and stirred it up in the dish. 
5-I took a package of pre-packaged-pre sliced plain sugar cookies and placed them on top of the apple mixture. Then I sprinkled cinnamon on top of the cookie dough balls. Then I baked in a 350 degree pre-heated oven for about 25 minutes. I tried to do it using the package directions on the sugar cookies but I found that the cookies needed a little more time to really form and bake for this one. Serve warm with ice cream or cold, either way your taste buds will be happy!

Beef and Cheddar Cheese Bake


My 7 year old had FOUR helpings of this. So you know it's good. 

I browned a pound of hamburger meat in a skillet with onion, salt and pepper. I drained and placed asside. 
Then I boiled a box (12 or 16 oz) of elbow macaroni. Then I mixed the two together. 
Then I placed the mixture into a 9x13 baking dish. Then I poured 1/2 cup of beef broth over the mixture, and sprinkled about a cup and a half of cheddar cheese over that. I baked in a 350 degree oven for about a half an hour or until the cheese was browning and bubbly. Delicious! Quick easy weeknight meal.

Our Finished Marbled Autumn Leaves! We Put Them on the Backsplash, They Look So Cute!


Autumn is Here! Marbled Leaf Craft





And what better way to celebrate than with a fall leaf craft! 
This one was pretty simple. I printed out some leaf templates on the computer and then cut them out to their leaf shapes. Then I placed some shaving cream in a box and mixed it up until it turned white. Then I dropped in some yellow, orange and red food coloring to create a marbled look. Then I had the kids drop the leaves into the mixture in the box and press down. Once they picked up the leaves they had a beautiful blended color to them! We placed them on the counter to dry, and then we hung them up in the kitchen. They turned out really cute!

Hot Chocolate Smore Cookies


Well as a tribute to the last day of summer AND the first day of fall tomorrow, I made hot chocolate (for the Autumn part) smore (for the summer part) cookies! They were so easy you'd scream.

1-take a package of snickerdoodle cookies and bake according to directions. You may need eggs, oil, etc. 
2-Cook the cookies in the oven according to package directions.
3-take a Hershey's chocolate bar broken up into pieces and place them on top of the cookie. Then place a large sized marshmallow on top of the chocolate. Bake cookies an additional 3 or 4 minutes just to melt the chocolate and brown the marshmallows. These were so yummy!

Chocolate Chip Banana Bread


I had 2 extremely ripe almost all the way brown banana's in my fruit basket. Gross right? No! I made amazing banana bread out of them!

I smashed the ripe bananas together with about a 1/4 cup of (melted) butter. 
Then I mixed with that 1 egg, 1 cup of white sugar, (I like it sweet), and one teaspoon of baking soda. Come to think of it I wonder if you replaced the white sugar with brown sugar how it would taste. Wouldn't hurt to try it next time! I mixed all these things up until they were good and blended then I added 1 1/2 cup of all purpose flour. Then I folded in a little more than half a cup of chocolate chips. You could add more or less, depending on what you like. 

Next I pre-heated the oven to 350 degrees and I sprayed a bread pan with cooking spray. I poured the mixture into the pan and baked it for about an hour. I just checked after an hour to make sure the knife in the center came out clean. My first born ate nearly the entire loaf in one day! He kept saying, "Mom, can I have some more bread?" HeHe! So yummy and addicting, especially warmed up with a little butter on the top of your slice! 

Peach Cobbler With Crescent Rolls


I had been to the farmers market, and got some fresh peaches, (denial that summer is over). I needed to use them up but was trying to figure out how. I also had a tube of crescent rolls. The gears were turning. I was going to make a peach cobbler pie using crescent rolls for the crust! 

Step 1, cut up peaches into slices, place in a pot with 1/2 cup water, 1/2 cup sugar, 1/2 cup brown sugar. Cook over the stove top until boiling, stiring frequently. You will know that it's done when the sugars start to caramelize onto the peach slices. 
Step 2, heat oven to 350. Pour caramalized peaches into the bottom of a 9*13 dish, or a pie dish, or any kind of dish you want to use. 
Step 3,   cut the crescent rolls into 1 inch cubes, place on top of the peaches. Bake for 15-20 minutes, checking to see when the rolls are just browned enough. Serve warm with a big ol' scoop of ice cream over the top!

Rainbow Fish!


H made a beautiful rainbow fish today. I cut out a fish shape for him, then cut some long strands using tissue paper. He glued the strands onto the fish to make it very colorful!

Skillet Sausage Pasta


This is an easy weeknight meal.

Cook one 16 oz box of rotini pasta according to package instructions. 
While that is cooking, cook 1 package sausage (I used breakfast sausage because that's what my family likes) in a skillet, drain.
Mix the cooked pasta with the cooked sausage and place back in the skillet. Mix with 1 jar marinara sauce. Top dish with shredded mozzerella. 
Place in a pre-heated 350 degree oven until cheese is bubbly and browning, oohy gooy goodness.
Feed to those hungry family members!

Apple Pie Bars!


These were so easy to make it was ridiculous. 
Step one, spray the bottom of a 9 x 13 dish with cooking spray.
Step 2, place any flavor pre-packaged, pre-cut ready made cookies (get a 24 pack, so you can do 12 on 12. Place the first 12 cookies onto the bottom of the dish and press, to make a crust. I used sugar cookies for the bottom, and chocolate chip cookies for the top, you can use any kind you want.
Step 3, pour an apple pie filling over the top of the pressed in cookie crust. 
Step 4, place the remaining 12 pre-sliced cookies on top of the apple filling, do not press them down, just place scattered on top until most of the apple pie filling is covered. 
Step 5, bake in a pre-heated 350 degree oven for around 30 minutes, more or less, you just have to check on it periodically. 
Step 6, take out of oven to cool, cut into squares or "bars." Enjoy!

Pumpkin Pie Milkshake


Since it's not quite cool enough yet outside to have a hot pumpkin flavored beverage-but we still WANTED a pumpkin flavored beverage, we made pumpkin pie milkshakes!

We just mixed in a blender:
3 cups ice cream
2 cups milk 
1/2 cup pumpkin pie puree
1 tablespoon pumpkin pie spice

Mix it all in a blender and there is your yummy drink! This would be yummy too with whipped cream on the top as a garnish!

Apple Pie Smoothie


Another good fall drink to have in September while it's still warm out. 

1 cup vanilla pudding (already mixed and made)
2 cups applesauce
2 cups vanilla ice cream
2 cups milk
Mix in the blender and then top with cinnamon. Yummy!
